Why Go: No Rajasthani festive or wedding menu is complete without this popular recipe. Baatis are flaky round breads baked over firewood or in a gas tandoor or an electric oven and always served dipped in ghee with panchmel or panch kutti dal (lentil) and churma. The dal is cooked with ghee and masalas. Some unsalted dough are shaped into rounds and deep fried in ghee and later crushed and mixed with either sugar or jaggery to make a sweet dessert- churma.
